ESSENTIAL OIL RECIPE: The southern tradition of eating Black Eyed Peas on New Year’s Day to bring in wealth and prosperity in the coming year continues with this delicious recipe made with pure essential oils.

Ingredients:

1 pound shelled fresh black-eyed peas, or 1 pound (2 1/2 cups) dried black-eyed peas
2-4 drops of pure organic black pepper essential oil
2 drops of pure organic coriander essential oil
2 drops of pure organic basil essential oil
1 medium onion, peeled and quartered
1 celery stalk, chopped
1 ham knuckle (optional)
1 small bunch curly or flat leaf parsley
Celtic or coarse salt to taste

ADDRESSES:

Rinse your fresh or dried black-eyed peas in cold water. Put it in a large pot and cover with water, showing about 2 inches of water above the peas. Add onion, ham (optional), parsley (including stems). Cover and bring to a simmer, below boiling point, over medium-high heat. Let cook until peas are tender, about 45 minutes for dry peas (although cooking time will vary). Don’t stir the peas while they cook because they can spoil too much. Add salt during the last 10 minutes of cooking.

At the end of the cooking cycle, with the heat off, add the organic essential oils of black pepper, coriander, and sweet basil to taste. If you didn’t use a knuckle of ham for the fat broth, you’ll need to mix your oils in 1/8 teaspoon olive oil before adding them to your black-eyed peas.

The peas will keep in their cooking broth for about 3 hours at room temperature. It is then stored in an airtight container in the refrigerator for 1 to 2 days. Serve the black-eyed beans hot, along with their broth, in individual bowls. If desired, shred the knuckle meat and serve with the peas.

CAUTION: Due to its mildly stimulating properties, avoid coriander essential oil during the first 3 months of pregnancy.

PLEASE NOTE: There are many cheap synthetic copies of fragrance oils, but they are not recommended for therapeutic use. For best results, buy the highest quality oils you can find. Use certified organic essential oils or oils that have been tested and do not contain pesticides.
