What do you need:

  • 1/2 bunch of coriander
  • 3/4 cup ground lamb
  • 1/4 cup plus 1 tablespoon plain nonfat Greek yogurt
  • 2 green chilies, chopped
  • 2 garlic cloves, minced
  • 1 chopped onion
  • 2 teaspoons canola or grapeseed oil
  • 2 tablespoons of water
  • 1 teaspoon coriander seeds toasted and coarsely ground
  • 1 teaspoon ground cumin seeds, toasted
  • Handful of mozzarella cheese
  • Salt and pepper to taste
  • 3 pieces of naan frozen, thawed

Heat the oil in a small skillet over medium heat and cook the onion and garlic until tender. Add the ground lamb, toasted coriander, and cumin seeds, salt, and pepper. Cook for 6-8 minutes or when the lamb is cooked through. Remove from heat and set aside. Combine the cilantro, 1/4 cup yogurt, green chilies, and water in a blender (season with salt and pepper if desired) and process until smooth. Divide the cilantro yogurt sauce between naan followed by cooked lamb, then top with mozzarella cheese. Bake in a preheated oven (450F) until cheese begins to bubble. Garnish with the remaining yogurt, raw onion, and coriander leaves.

Basil and lavender fruit bowl

What do you need:

  • 2 peaches, diced
  • 1 cup of grapes
  • 1 cup watermelon cubes
  • 1/2 cup of blueberries
  • 1/4 cup fresh lime juice
  • 2 tablespoons of honey
  • 1 teaspoon dried lavender buds
  • 1/2 teaspoon finely chopped fresh sweet basil

Heat the lemon juice and honey over medium heat in a small saucepan. Stir until well combined. Remove from heat when heated through and then add the lavender buds and basil leaves. Reserve and let it rest for 8 to 10 minutes. Place the peaches, grapes, watermelon cubes, and blueberries in a large bowl and pour the basil and lavender syrup over the fruits.

What do you need:

  • 2 ears of corn, peeled and cooked
  • 12 lettuce leaves
  • 2 lemons, juiced
  • 1 bunch chives, trimmed and thinly sliced
  • 1/2 bunch of coriander, chopped
  • 1/2 onion finely chopped
  • 1/2 cup chopped flat-leaf parsley
  • 1/2 cup of feta cheese
  • 2 tablespoons of extra virgin olive oil
  • Freshly ground pepper

In a medium bowl, combine chives, cilantro, parsley, lemon juice, and olive oil. Remove the corn from the cob carefully with a sharp knife and add the kernels to the herb mixture. Stir until all the ingredients are well combined. Divide the mixture into 12 and put it on lettuce leaves. Top with feta cheese and season with ground pepper.
